Discover Enotrio Pinot Nero Tiurema 2019, a100% Pinot Noir from a half-hectare organic vineyard located at 1,000 meters in the Contrada Lago area of Maletto. Nestled on the north slope of Etna, this vineyard thrives on clay soils and was previously used for cereals and grains. The Pinot Noir grapes are sourced from the esteemed vine cultivator, Pierre-Marie Guillaume, ensuring exceptional quality in every bottle.
Hand-harvested at the end of September, the grapes undergo a careful process where they are de-stemmed and allowed to spontaneously ferment in open vats. After 10 days, the wine is transferred to second and third passage barrels, including barrique and tonneaux, where it ages for six months. Following this, the wine is racked off its fine lees and rests for an additional six months in steel before bottling.

Vinification: Harvesting is carried out exclusively by hand in ventilated crates at the end of September. The destemmed and crushed grapes are left to ferment at an uncontrolled temperature in open vats. The spontaneous fermentation, without the addition of selected yeasts, occurs during maceration with the skins. This process is very slow and lasts about 10 days. Afterward, racking takes place, followed by pressing with a manual hydraulic press. The wine obtained is placed in oak barrels, barriques, and tonneaux of second and third use, where spontaneous malolactic fermentation occurs.
Ageing: In the barriques and tonneaux, the wine remains for six months, refining on the fine lees. Once separated from the lees, it stays for another six months. This is followed by a six-month period in stainless steel tanks, after which it is bottled and aged for approximately 5–6 months before reaching its final destination.

The Puglisi Family owns around 4 hectares in total. The area is characterized by a large diurnal range and lower humidity compared to other slopes, factors that, in an hot region like Sicily, are essential to the production of fresher and more aromatic wines.
Nunzio’s lifelong experience along with a great attachment to his “Terra” convinced him to use only organic practices to manage his vineyards.The family uses the same attention and care in the cellar, where only indigenous yeasts are used for fermentation, which is rigorously spontaneous. White wines are aged in stainless steel whereas the reds mature in second or third passage Barriques / Tonneaux for 12 to 24 months depending on the wine. Nunzio’s wines are not filtered, clarified or stabilized as Nunzio is a firm believer that wine must be a true and honest expression of the typicity and uniqueness of its terroir.
