Viticulture: Organic (certified in Italy by Suolo & Salute – Control and Certification Body)
Vinification: The grapes are gently crushed and the juice is stored at low temperature to naturally prevent fermentation. To begin the fermentation yeast is added and the temperature is increased to 18° C. Alcoholic fermentation occurs in stainless steel autoclave. The fermentation is stopped at 5.5% Alc. by reducing the temperature
Ageing: Two/three months in stainless steel + one month in the bottle

Colour: Pale lemon
Nose: White peach, crushed flowers and sweet spices
Palate: Refreshing and balanced acidity, fine and delicate bubbles and great complexity. Fresh apricot aftertaste
